Is the best approach the Special Hobby post-war foreign service kit and scratchbuild the fairings for the wing cannons? Alternatively, I suppose I could troll ebay for a Flying machines kit but I'd guess the price would be significantly higher and the time for a bite may be long.

The easiest approach to model a G.55 Serie I without having the FM kit is to start with the SH Sottoserie 0 and just add the fairings for the wing cannons. If you use the SH G55A there are differences in the O2 fill location and other small changes you need to make (e.g., access hatch locations etc.).
